ARTICHOKE FRITTATA 
2 (6 oz.) jars marinated artichoke hearts, chopped, reserve liquid
3 green onions, chopped
1 clove garlic, mashed
4 eggs
6 soda crackers, crumbled
1/2 lb. sharp Cheddar cheese, grated
2 tbsp. chopped parsley
Salt and pepper

Drain marinade from artichokes into skillet. Chop artichokes and set aside. Add onions and garlic to skillet. Saute onions until limp.

In a bowl, beat eggs with wire whisk. Add soda crackers, salt and pepper. Stir in cheese, parsley, artichokes and onion mixture.

Pour into buttered 8x8 inch casserole. Bake at 325 degrees 35-40 minutes until set. Let cool in pan, then cut into bite size squares. Serve warm or cold.
