ASPARAGUS FRITTATA 
1 pkg. frozen chopped asparagus or 1/2 lb. fresh
5 lg. eggs
1 tbsp. grated onion or shallot
Salt and pepper to taste
3/4 c. grated Gruyere
2 tbsp. butter

Cook asparagus according to package (just done); drain and cool. Beat eggs with onion, salt, pepper, and 1/2 cup of the cheese. Blend in drained cooked asparagus.

In a skillet, melt butter; pour in the egg mixture and cook over low heat until the eggs are nearly set. Sprinkle with remaining cheese. Place under a medium broiler and finish cooking.
