ARTICHOKE APPETIZER FRITTATA 
2 (6 oz.) marinated artichoke hearts, undrained
3 green onions, chopped
1 clove garlic, crushed
4 lg. eggs
1/8 tsp. pepper
2 c. (8 oz.) shredded cheddar cheese
6 Saltines, crumbled
2 tbsp. chopped parsley

Drain artichokes; reserve liquid. Chop artichokes and set aside. Pour artichoke liquid into 9-inch skillet; add green onions, garlic, and saute for a few minutes. Drain.

Combine and beat together eggs and pepper; stir in artichokes, onion mixture, cheese, cracker crumbs, and parsley. Pour mixture into 8-inch greased baking pan. Bake at 325 degrees for 35-40 minutes or until set. Cut into 1 1/2-inch squares. Makes 2 dozen.
