CRABMEAT CASSEROLE 
1 can (6 1/2 oz.) flaked, cooked crabmeat (or salmon or tuna)
Whites of 2 hard boiled eggs, diced
Yolks of 2 hard boiled eggs, mashed
3/4 c. soft bread crumbs
1/2 c. low fat milk
1/2 tsp. salt
Dash of cayenne pepper
Seasoned bread crumbs

Preheat oven to 450 degrees. In medium bowl mix together milk and soft bread crumbs. Gently stir in crabmeat and diced egg whites. Blend in mashed egg yolks, salt and cayenne. Place into two individual sized baking dishes. Sprinkle casseroles with seasoned bread crumbs. Bake for 15 minutes. This recipe serves two or eat one tonight and freeze one for later.
