FRUIT PIZZA 
CRUST:

2 c. flour
3/4 c. butter
1 c. powdered sugar

Melt butter. Mix together flour, sugar and butter. Spread out on a lightly oiled pizza pan. Bake at 350 degrees until barely brown (10-15 minutes). Let cool.

GLAZE:

6 oz. pineapple juice
2 oz. water
1 tbsp. cornstarch (a little more is sometimes needed to thicken juice)

Combine ingredients in a small saucepan. Heat until thickened. Set aside to cool. May be put in refrigerator for a short time to help cool.

FILLING:

8 oz. cream cheese
1 c. powdered sugar
1/2 tsp. vanilla

Combine all ingredients in a small bowl. Blend well. Spread mixture evenly over crust.

Slice assorted fruits (whatever is in season) and arrange on top of pizza in a decorative manner. Fruits which will discolor (banana, peach, etc.) should be treated with fruit fresh or lemon juice. Spread glaze evenly over top of fruit. Refrigerate. Slice and serve.
