"WORKING GIRL'S FRUIT COBBLER" | |
1 c. plain flour 1 c. sugar 1 c. milk 1/4 tsp. salt 3 tsp. baking powder 1 stick butter 1 can any kind of fruit or pie filling (regular fruit may have to be thickened with cornstarch) Melt butter in pan you will cook pie in. (I use a Corningware dish near the size of 13 x 9 inch). Use 1 (16 ounce) cherry pie filling or blueberry. If you use cherry filling add 1 teaspoon of almond flavoring to it before adding to other ingredients. After melting the butter, mix dry ingredients together, then add milk. Pour into hot melted butter and stir with fork. Next, add the cherries with the almond flavoring, stirring into batter. The cake batter will come up over the fruit and the top will brown. Bake at 400 degrees for about 20 minutes. I let this cook while we are eating supper, then top with a scoop of vanilla ice cream. |
