SWEET CORNBREAD | |
2 c. cornmeal 1/2 c. flour 2 eggs, separated 3 c. hot milk 1 tsp. salt 1 tsp. baking powder 2 tbsp. melted butter 1/2 tsp. vanilla 1 tsp. baking soda Add cornmeal gradually to hot milk, stirring constantly. Let cool. Add butter, salt, egg yolks, soda and baking powder. Beat about 2 minutes and fold in stiffly beaten egg whites. Pour into well oiled baking pan and place in a preheated 425 degree oven. Bake 30 to 45 minutes. Test for doneness with a toothpick after 30 minutes. |
