RED VELVET CAKE 
1 c. shortening
1 1/2 c. sugar
2 eggs
2 oz. red food coloring
1 tsp. salt
2 1/4 c. flour
1 c. buttermilk
1 tsp. butter flavoring (optional)
1 tsp. baking soda
1 tbsp. vinegar
1 tsp. cocoa

Cream shortening, sugar and eggs. Make paste with food coloring and cocoa; add to mixture. Add salt and flour with buttermilk, butter flavoring and vanilla. Alternately add soda and vinegar. Do not beat hard; just blend. Pour into two 8-inch pans greased and floured.

Bake 30 minutes at 350°F.

Cream Cheese Frosting:

1 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla
1 tbsp. butter, softened
1 lb. confectioners sugar

In medium bowl, beat cream cheese, butter and vanilla until light and creamy. Add confectioners sugar; beat until of spreading consistency. Spread on cake.
