RED VELVET CAKE 
Cake:

2 1/2 c. flour
1 c. buttermilk
1 1/2 c. veg oil
1 tsp. baking soda
1 tsp. white vinegar
1 tsp. vanilla extract
1/4 c. red food color
1 1/2 c. sugar
1 tsp. un-sweet cocoa
2 large eggs

Preheat oven to 350°F, mix together all ingredients with electric mixer. Spray 2 - 9 inch rounds. Pour batter equally in pans.

Bake 20 minutes. Cool on rack for 10 minutes.

Frosting:

1/3 lb. butter, soft
10 oz. cream cheese
16 oz. confectioners sugar

Combine all ingredients for frosting in medium bowl. Beat until fluffy then fill and frost cake when it has cooled. Refrigerate at least 1 hour before serving.
