SAUSAGE & ZUCCHINI PIE 
1 to 2 lbs. sausage, mild
1 clove garlic, minced
1/4 c. bread crumbs
1 tsp. oregano
3 tbsp. grated Parmesan
1 c. sour cream
Zucchini, about 5 to 6 average size, sliced thin
6 oz. Mozzarella, grated

Preheat oven to 350 degrees. Take sausage meat out of casing. Brown meat in skillet until all pink meat is browned. Pour off fat. Add garlic, bread crumbs, oregano, sour cream and 2 tablespoons Parmesan cheese.

Place half of zucchini in bottom of greased casserole. Add all pork mixture and the rest of the zucchini on top of pork. Cover and cook in oven for 40 to 45 minutes. Uncover and sprinkle grated Mozzarella and rest of Parmesan on top. Return to oven and bake, uncovered, additional 15 minutes. This may be layered in an unbaked pie shell in the casserole and baked as indicated above.
