ZUCCHINI RICE WITH SAUSAGE 
1 lb. smoked sausage (Kielbasa "good") cut into bite sizes
1 1/2 c. Minute Rice (or 1 cup regular rice)
1 1/2 lbs. zucchini squash, chopped
1/2 c. chopped onions
1 can (16 oz.) stewed tomatoes
1 c. hot water
1 tsp. prepared mustard
1 tsp. garlic powder
Dash pepper
1 c. sharp grated cheddar cheese

In large skillet, brown sausage. Remove and drain on paper towel. Retain 2 tablespoons fat. Add rice, onion, and zucchini. Cook and stir until slightly browned. Stir in tomatoes, water and mustard, garlic powder and pepper. Bring to boil, cover and simmer 5 minutes. Put in casserole, sprinkle cheese on top and bake at 350 degrees for 20 to 30 minutes. NOTE: If using regular rice, simmer a bit longer.

This dish required a splash of soy sauce, then it popped! I felt the Kielbasa did not want to share its flavor until I did! I could not detect the garlic at all. Other than that the mustard was mild but the smell was incredible!
