SAUSAGE RICE STUFFING 
1/2 c. Romano cheese
4 c. cooked brown rice
1 lb. Italian sausage
1/4 c. olive oil
1 chopped pepper
1 chopped onion
4 cloves garlic
1/3 c. tomato sauce
Spices to taste

Saute vegetables in olive oil until slightly browned. Remove from pan and set aside. Remove sausages from casings. Saute sausages, breaking them up as you do so until fully cooked. Return vegetables to pan and add sauce. Cook for 5 minutes. Mix together with rice and cheese and stuff turkey or bake in casserole for 45 minutes at 350 degrees.
