SAUSAGE-ZUCCHINI BOATS | |
1/4 lb. sausage 4 med. sized zucchini 1/4 c. chopped onion 1/2 c. grated Parmesan cheese 1 egg, slightly beaten 1/2 c. crushed cracker crumbs 1/2 tsp. monosodium glutamate 1/4 tsp. salt 1/4 tsp. dried thyme, crushed Dash pepper Paprika Cook whole zucchini in boiling, salted water until tender, about 7 to 10 minutes. Cut each zucchini in half lengthwise. Scoop out interior of squash and mash. Brown sausage and onion in a heavy pan. Stir in mashed zucchini. Add remaining ingredients except for paprika and 2 tablespoons of Parmesan cheese. Mix well. Spoon into zucchini shells. Place shells in a shallow baking dish. Sprinkle Parmesan cheese and paprika on top of each squash. Bake at 350 degrees for 25 to 30 minutes. Serves 4 to 8. |
