BEEF VEGETABLE SOUP (STEW) 
2 lb. ground chuck
1 lg. onion, chopped
3 lg. potatoes, diced
2 boxes frozen mixed vegetables (or 1 lg. bag)
2 #2 cans tomato sauce
1 can tomatoes
3 tsp. salt (or more)
Pepper to taste

Brown ground beef and onions in a large pot (Dutch oven) in 1 cup water. Add diced potatoes, tomato sauce, tomatoes, salt and pepper. Cook slowly until potatoes are soft. Add frozen vegetables. Let simmer as long as you wish. Add more water and/or tomato juice if desired. Serve with hot cornbread.
