VANILLA BREAD PUDDING | |
1 qt. low fat milk 2 large eggs 1/2 cup granulated sugar 1 tsp ground cinnamon 1 tsp vanilla extract 6 cups 1-inch cubes Italian bread 1/4 cup strawberry jam 1/3 cup light brown sugar In small saucepan, heat milk until very hot but not boiling. In bowl, whisk eggs and granulated sugar to mix. Whisk in hot milk; add 1/2 tsp. cinnamon and the vanilla. In 2 qt. shallow baking dish, arrange bread, crust sides down. Pour milk mixture over bread. Let sit 20 minutes, pressing down on bread occasionally to soak up liquid. Spoon jam between bread cubes. Preheat oven to 350°F. In cup, mix remaining cinnamon and brown sugar; sprinkle evenly over pudding. Set pudding dish in roasting pan; place on center oven rack. Add enough boiling water to come halfway up sides of dish. Bake 45 minutes or until set and browned. Let cool slightly; remove pan from hot water. Serve warm or slightly chilled. |
