BREAD PUDDING WITH VANILLA OR
LEMON SAUCE
 
6 slices bread, cubed
1 c. hot water
1 c. packed brown sugar
4 eggs, lightly beaten
2 c. warm milk
1/2 c. sugar
1/2 tsp. vanilla and cinnamon
1/8 tsp. salt

Place bread in greased 2-quart baking dish. Mix the hot water and brown sugar in a bowl. Pour over the bread. Combine the eggs, milk, sugar, vanilla, cinnamon and salt in a bowl and mix well. Pour over the top.

Bake at 350°F for 50 to 60 minutes or until knife inserted comes out clean. Drizzle with vanilla or lemon sauce.

Vanilla Sauce:

2 tbsp. sugar
1 tbsp. cornstarch
3 tbsp. butter
1/4 c. light corn syrup
3/4 c. milk
1 tsp. vanilla or lemon

Cook until thickened. Serve warm.

Makes 1 1/4 cups.
