PECAN PIE BARS | |
1 yellow cake mix 1/2 c. melted butter 1 c. chopped pecans (more if you would like) 1 1/2 c. dark corn syrup 1 tsp. vanilla 4 eggs 1/2 c. brown sugar Grease sides and bottom of 9 x 13 inch cake pan. Reserve 2/3 cups dry cake mix for filling. Combine remaining cake mix in a large bowl with melted butter and 1 egg. Mix until crumbly. Press into pan and bake at 350 degrees for 15 minutes or until golden brown. Prepare filling: Combine remaining ingredients, except nuts. Beat at medium speed with mixer for 12 minutes. Pour filling over baked crust. Sprinkle with pecans and return to oven for 30 to 35 minutes or until filling is set. (I baked it longer, about 45 minutes.) Cool before cutting. Good for freezing. |
