PEACH COBBLER SALAD 
6 peaches
3 cups sweetened coconut
12 tbsp. cottage cheese
3 tbsp. sour cream
3 tbsp. sugar
2 tsp. lemon juice
6 tsp. milk
3 cinnamon graham crackers

Wash peaches. Dice into half inch cubes.

Microwave the diced peaches for 1 minute. Combine diced peaches with coconut, stir.

In a separate bowl combine cottage cheese, sour cream, sugar, lemon juice, and milk, stir. Combine ingredients in both bowls, together and mix well.

Crush graham crackers to fine crumbs. Sprinkle graham cracker crumb on top of the mixture. Refrigerate for at least 15 minutes before serving.

Yield: About 12 servings.

This was a huge hit at the family picnic. The recipe is too large for just a family dinner unless it is all you are eating. But gee, 12 tablespoons? I used a 16 oz small curd cottage cheese. it worked fine and for those who hate cottage cheese (myself included) you couldn't tell it was there. I had no graham crackers but I used honey graham cereal (I keep the small boxes for the grandkids) with a litte cinnamon added.
