CHOPPED BEEF WITH YORKSHIRE
PUDDING
 
1 lb. lean ground beef
2 tbsp. finely chopped onion
1 tbsp. chopped parsley
1 tsp. salt
1/8 tsp. nutmeg
1 c. unsifted flour
1/4 tsp. salt
1 c. milk
2 eggs
3 tsp. butter

Oven temperature, 400 degrees. Bake 35 minutes. Servings 4.

Blend ground beef with onion, parsley, 1 teaspoon salt, and nutmeg. In another container, mix flour and remaining salt. Gradually beat in milk. Beat in eggs. Melt butter in a 1 1/2 quart baking dish. Pour half batter into baking dish; spoon on meat mixture and top with remaining batter. Bake for 35 minutes or until brown around the edges.

This is one of my go-to comfort meals. Easy, quick and get's you out of the "What to do with Chopped Meat" rut. Kids will enjoy it too.
