GROUND BEEF CHOP SUEY 
4 lg. onions, coarsely chopped
5 celery ribs, coarsely chopped
1 sm. bottle soy sauce
1 1/4 lb. good ground beef
1 can water chestnuts, drained & sliced thin
1 can mushrooms, stems & pieces, drained
1 lg. can bean sprouts, drained

Cover onions and celery with water. Cook 10 minutes. Drain water off. Add soy sauce and ground beef, mix and cook 10 minutes. Add water chestnuts and mushrooms and cook 10 minutes. Remove from heat, stir in bean sprouts, and let steam, covered, 5 minutes. Serve over rice. Makes about 1 1/2 quarts.
