RAISIN BRAN MUFFINS (FOR A
CROWD)
 
5 cups whole wheat flour
3 cups sugar
1 medium (20 oz.) size box Raisin Bran cereal
4 eggs
2 tsp. salt
2 tsp. baking soda
1 quart buttermilk
1 cup cooking oil

Preheat oven to 400°F.

Mix flour, salt, baking soda and set aside. Mix rest of ingredients together. Then slowly stir in flour mixture.

Divide evenly into muffin tins.

Note: This makes a large batch of muffins (at least 3 dozen, depending upon size). This is a good candidate for batch cooking; make more than you need and wrap them tightly in plastic wrap or foil and toss the wrapped muffins into a jumbo ziploc bag and use them as needed. To use: Thaw on counter for 30 minutes and heat in conventional oven for 10 minutes at 375°F or unwrap and microwave on high for about 30 seconds.

Bake for 15-20 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
