SONORA CHICKEN CASSEROLE | |
1 (3 lbs. or more) chicken 1 can cream of chicken soup 1 can cream of mushroom soup 1 (15 oz.) can chili without beans 1 (4 oz.) can chili salsa or taco sauce 1/2 c. milk 1 sm. onion, chopped 1 pkg. corn tortilla chips 1/2 lb. sharp Cheddar cheese, shredded 1/2 lb. Jack cheese, shredded Simmer chicken in water until meat slips easily off bones. Cut or tear meat into 1 inch pieces. Crush tortilla chips. In large bowl, mix soups, chili, salsa, milk, and onion. Put a layer of chicken in a large casserole dish, then half the chips, then half the sauce, and finally half the cheese. Repeat this layering, ending with cheese. To bake it immediately, put it into a 350 degree oven for about 45 minutes. If you freeze it, bake it for 90 minutes at 350 degrees and check the deep middle before serving. Let stand 10 minutes before serving. Serves 8. |
