POTATO ROLLS 
2 pkg. yeast
1 3/4 c. potato water
3/4 c. sugar
1 1/2 tsp. salt
3 beaten eggs
1 med. mashed potato
3/4 c. butter, melted
7 to 7 1/2 c. flour

Combine yeast, sugar and salt to warm potato water, let sit 15 minutes. Add eggs, potato and butter, mix. Gradually add flour. Knead until firm and gooey- pour into greased bowl. Let rise covered 2 hours. Knead again and separate into 4 parts. Roll each section into round pizza size shapes - cut into even wedges. Roll each piece into crescent roll - place on cookie sheet with point on under side. Let rise 30 minutes.

Bake 15 minutes at 375 degrees, 1 sheet at a time - may freeze rolls for later use.
