CARROT BANANA BREAD | |
1 c. mashed bananas 1 c. sugar 3/4 c. oil 2 eggs 2 c. flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon (opt.) 1 c. grated carrots 1/2 c. nuts Beat for 2 minutes the bananas, sugar, oil and eggs. Sift together the flour, soda, salt and cinnamon. Fold into the banana mixture. Stir in carrots and nuts. Bake in a greased and floured 9"x5"x3" loaf pan for 60 minutes at 350 degrees. Partially cool on rack. Remove bread from pan and finish cooling. Makes 1 loaf. |
