BANANA CARROT NUT BREAD | |
2 c. flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1 c. mashed ripe bananas 1 c. sugar 3/4 c. vegetable oil 2 eggs 1 c. finely grated pared carrots 1/2 c. chopped pecans Sift together flour, baking soda, salt and cinnamon. Set aside. Combine bananas, sugar, oil and eggs. Beat with electric mixer at medium speed 2 minutes. Stir in dry ingredients. Fold in carrots and pecans. Spread in greased and floured 9 x 5 x 3 inch loaf pan. Bake in 350 degree oven for 55 minutes or until wooden pick inserted in center comes out clean. |
