CARROT BANANA BREAD 
1 c. mashed bananas
1 c. sugar
3/4 c. oil
2 eggs
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. grated carrots
1/2 c. nuts

Beat for 2 minutes the bananas, sugar, oil and eggs. Sift together flour, soda, salt & cinnamon. Fold into the banana mixture. Stir in carrots and nuts. Bake in greased and floured 9 x 5 x 3 inch loaf pan (or 3 mini loaf pans) at 350 degrees for 60 minutes. (30 minutes for mini loaf pans.)
