BANANA BREAD OR CARROT BREAD 
1 3/4 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. chopped nuts (any kind)
2/3 c. butter
1 c. sugar
2 eggs
1 c. finely grated carrots or mashed bananas
1 c. seedless raisins

Sift dry ingredients. Cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each one. Add dry ingredients gradually, beating after each addition. Add carrots, raisins, and nuts. Bake in well oiled and lightly floured baking pan, 9 x 5 x 3 inches, in oven at 350 degrees F. for about 1 hour. Turn out on wire rack and cool. Store in covered container overnight before slicing. Makes a very special breakfast bread.
