BANANA-CARROT BREAD 
1 pkg. banana quick bread mix
1 med. size, ripe banana (1/2 c. mashed)
2 med. size carrots (1/2 c. grated)
1/2 c. water
1 egg

1. Preheat oven to 375 degrees. Grease and flour bottoms only of an 8"x4" or 9"x5" loaf pan.

2. Peel and mash banana (you should have 1/2 cup). Peel and grate carrots (you should have 1/2 cup).

3. Pour mix into large bowl (break up any lumps with a fork). Add 1/2 cup banana, 1/2 cup carrots, 1/2 cup water and 1 egg. Stir with a spoon about 60 strokes to combine or until ingredients are moistened.

4. Pour into prepared pan. Bake 45 to 55 minutes. Bread is done when a toothpick inserted in the center comes out clean.

5. Cool 15 minutes, remove from pan. Let bread cool completely before slicing. To freeze bread, cool for 3 hours, then wrap securely.
