WHOLE WHEAT BANANA CARROT BREAD | |
1 stick butter 1 c. brown sugar 2 eggs 1 c. flour 1 c. whole wheat flour 1 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. cinnamon 1 c. mashed bananas 1 c. shredded carrots 1/2 c. fine nuts Beat butter for 30 seconds. Add sugar until fluffy. Beat in 2 eggs, combine flour, soda, powder, salt and cinnamon. Add dry ingredients and bananas, beat after each addition. Fold in carrots and nuts. Pour in 2 greased 7 1/2 by 3 3/4 loaf tins. Bake at 350 degrees for 40 to 50 minutes. 15 servings per loaf. |
