DOT WAGNER'S EGGPLANT CASSEROLE 
2 eggplant, peeled and cubed
1 lb. hamburger meat
2 bell peppers, chopped
1 onion, chopped
1 pkg. Stove-Top stuffing cornbread mix
1/2 jar Ragu pizza quick sauce
1 c. water, boiling
2 eggs, beaten
Grated cheddar cheese
1/2 tsp. salt
Pepper to taste
1 sm. jar pimentos, drained and chopped

Brown and drain hamburger. Boil eggplant 5 minutes; drain. Put cornbread stuffing in large pan (reserve the seasoning envelope). Saute onion and bell pepper in 1/2 stick butter and then add Stove Top stuffing seasoning and boiling water.

Pour over the stuffing in large pan and stir until moist throughout. Stir in hamburger, eggplant, and pimentos. Add beaten eggs and Ragu sauce. Stir all ingredients together; add salt and pepper. Pour into casserole dish and top with grated cheddar cheese.

Bake 30 minutes at 350 degrees or 5 minutes in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
