IMPOSSIBLE PIE CUSTARD 
2 c. milk
4 eggs
1/2 c. sugar
1/2 c. flour
1/4 c. butter, cut up
1 tsp. vanilla
1/4 tsp. salt
1/3 c. flaked coconut (optional)

In blender combine milk, eggs, sugar, flour, butter, vanilla and salt. Cover. Blend about 10 seconds. (Do not overblend.) Stir in coconut (I leave it out). Pour into a greased 9 inch pie plate. Bake at 350 degrees for 40 minutes or until knife inserted halfway between center and edge comes out clean. Cool. Then chill. Can use mixer if no blender.
