IMPOSSIBLE CUSTARD PIE 
3 eggs
1 (12 oz.) can evaporated milk
1 c. sugar
3 tbsp. flour
3 tbsp. butter
1 tsp. vanilla extract
1/2 tsp. almond extract

Grease and flour a 9 1/2 inch glass pie pan. Combine all ingredients in blender. Blend for 30 seconds. Pour into pie pan. Bake at 350 degrees for 45 minutes. Pie will rise but will settle as it cools and forms a light crust. Serves 6 to 8.

Note: Can double and use a 9x13 inch pan.

I super floured the greased pan. I left out the almond extract and added in its place a quarter teaspoon of cloves and quarter tsp of cinnamon. Custards are delicate so I did not want to overdo with strong flavors. And I used a food processor on low for 30 seconds. Next time I would use 3/4 cup sugar.
