STRAWBERRY MOUSSE 
1 env. unflavored gelatin
1/2 c. sugar
Pinch of salt
1 1/4 c. strawberry juice (drain frozen strawberries and add water to juice)
1 egg white
3/4 c. whipping cream
1 1/2 c. drained frozen strawberries

Mix gelatin, sugar and salt in double boiler. Add juice and heat until gelatin dissolves. Remove from heat and pour into large mixing bowl. Cool to room temperature.

Stir in egg white. Refrigerate until slightly set. Whip mixture until forms soft peaks. Add fruit. Whip cream in separate bowl, then fold into gelatin mixture. Pour into lightly greased mold, chill until set. Can be spooned into individual dishes.
