WHITE CHOCOLATE MOUSSE WITH
FRESH BERRIES
 
2 c. Rich Whip
1 c. gourmet heavy cream
4 egg yolks
2 tbsp. sugar
8 oz. white chocolate
Fresh berries: raspberry or strawberry

In a cold bowl whip Rich Whip until stiff peaks form, set aside. In another cold bowl whip heavy cream, set aside. Melt white chocolate in microwave or double boiler.

In another bowl whip egg yolks and sugar until thick. Add the white chocolate mixture all at once, mix until smooth. Next add half the whipped Rich Whip, stirring up from the bottom, being sure to scrape the sides of the bowl. Add the remaining Rich Whip. Finally fold in the whipped cream into the mixture very gently. Pour mousse into serving bowl(s) and top with chocolate shavings and berries.

Since microwave ovens vary in power, you may need to adjust your cooking time.
