2 c. all purpose flour 1/2 tsp. baking soda 1/2 tsp. cinnamon 1/2 tsp. cardamom 1/4 tsp. coriander 1/4 tsp. nutmeg 1/2 c. chopped almonds 1/4 c. chopped candied orange peel 2/3 c. honey 1/4 c. chopped candied lemon peel 1/2 c. sugar 2 tbsp. butter 1 tbsp. lemon juice 1 recipe Glace Icing 1. Preheat oven to 350 degrees. Grease 13"x9" baking pan. 2. Sift flour, baking soda, cinnamon, coriander and nutmeg into bowl. Add almonds, candied peel and stir to combine. Set aside. 3. Cook honey and sugar over low heat, stirring until sugar is dissolved. Remove from heat, add butter and stir until butter is melted. Stir in lemon juice. Gradually stir in flour mixture to make sticky dough. 4. Spread in prepared pan. Bake 20 to 25 minutes or until lightly browned. Cool in pan. 5. Prepare Glace Icing. Drizzle icing over lebkuchen in pan while warm. Score into 2"x1" bars. Let icing set. Cut bars along scored marks and remove from pan. Store in air tight container. Makes 54 lebkuchen. |
