JAM FILLED MUFFINS 
2 eggs
1/2 cup sugar
1/3 cup melted butter
2/3 cup milk
1 3/4 cups all purpose flour
1 tbsp. baking powder
1 tsp. grated lemon peel
1/2 tsp. salt
Jam - flavor of your choice

Mix eggs, sugar, melted butter and milk. Add flour, baking powder, lemon peel and salt. Blend well. Use 12 count muffin tin lined with paper cupcake holders. Fill with 1/2 the batter, add a tablespoon of jam, then add batter to fill cup.

Bake at 400°F for 20 to 25 minutes.
