JAM - FILLED MUFFINS 
3/4 c. flour
1 c. whole wheat flour
3/4 c. sugar
1/4 tsp. cinnamon
2 tsp. baking powder
1/4 tsp. salt
3/4 c. milk
2 tbsp. vegetable oil
2 egg whites
1/2 c. apple, shredded
1/2 c. raspberry jam

Preheat oven to 400 degrees. Spray muffin pan with cooking spray. In large bowl mix dry ingredients. In small bowl combine milk, oil, and egg whites. Stir milk mixture into dry ingredients until just mixed. Fold in apple.

Fill muffin cups 1/3 full. In center of cup, spoon 1 1/2 teaspoon of jam. With remaining batter, top muffin cups to 2/3 full. Bake 15-20 minutes. Makes about 15 muffins.
