MANICOTTI 
1 c. sifted flour
1 c. water
Pinch salt
2 eggs

FILLING:

2 eggs
1 lb. Ricotta
2 lbs. Mozzarella cheese, shredded
1/2 c. grated Romano cheese
1/2 tsp. salt
1/2 tsp. pepper

Mix together flour, water, salt to make batter. Beat until smooth. Beat in eggs one at a time. Heat in greased skillet. Put 3 tablespoons at a time. Heat until firm. Do not brown turn and cook lightly on other side.

Put 2 tablespoons filling on each pancake and roll up. Put sauce in baking dish set pancake in with seam down. Sprinkle with grated cheese and more sauce on top. Bake in oven 1/2 hour to 45 minutes at 375 degrees.
