MONTEREY POTATOES 
3 med. baking potatoes, cut into 1/4 inch slices
1/4 lb. ground beef
1/2 c. picante sauce
2 tsp. chili powder
1/2 tsp. salt
1/2 c. chopped tomato
1 c. shredded natural Monterey Jack cheese
1 c. shredded lettuce

Brush both sides of potatoes with butter. Place on lightly greased cookie sheet. Bake at 400 degrees for 15-20 minutes on each side, or until potatoes are tender. Brown meat; drain. Add sauce, chili powder and salt; simmer 10 minutes. Place potatoes on oven-proof serving platter; top with meat mixture, tomato and cheese; broil until cheese is melted. Top with lettuce Serve with sour cream.
