POLPETTONE ITALIANO 
2 1/2 lbs. ground beef
2 loaves Italian bread
1 c. grated Romano cheese
1/2 c. chopped parsley
1 clove chopped garlic
1 tsp. black pepper
4 eggs
1/4 lb. finely chopped Prosciutto cheese

Wet the bread and squeeze out all water. Mix all ingredients with bread. Form into loaf and wrap with cheesecloth. Boil 4 quarts of water and put loaf into boiling water for 10-15 minutes. Remove from pot; cool and unwrap. Make Ragu style sauce. When loaf is cool, put it into sauce and cook 10-15 minutes. Slice and serve hot or cold.
