CHICKEN SALAD 
2 c. cooked chicken, chopped
2 hard boiled eggs
1 tbsp. lemon juice
1 c. finely chopped celery
1/2 c. mayonnaise
Salt and pepper to taste
2 or 3 slices sweet pickles (optional)

Separate whites from yolks of eggs. Mash each with a fork until fine. Add whites to chicken and celery. Add pickles, if desired. Mix egg yolk with lemon juice and then mayonnaise. Add to chicken and season to taste.
