LAMB IN A BISCUIT 
1 lb. ground lamb
1/2 med. onion, chopped or 1/4 c. dried onion
1 or 2 tubes of refrigerated biscuits (or make your own)
1 c. grated cheddar or Mozzarella cheese

Brown lamb and onion until cooked. Flatten each biscuit into a 6 inch oval. Place 1 or 2 tablespoons of lamb-onion on one end of flattened biscuit. Top with cheese. Fold over biscuit and seal edges with fork. Place on ungreased baking sheet and bake at 400 degrees for 10 minutes or until biscuits are puffed and golden brown. (Delicious served with hot mustard or barbecue sauce!)
