STUFFED PORTABELLA MUSHROOMS AU GRATIN | |
1 lb. whole portabella mushrooms 3/4 cup grated dry bread 2 cloves garlic, minced 5 tbsp. chopped parsley olive oil salt and pepper, to taste Begin preparing the stuffing mix by mixing the grated bread, garlic and parsley and adding olive oil to make the ingredients to stick together. Add salt and pepper, to taste. Clean the portabella mushrooms with a damp cloth, remove and discard the stems (they are somewhat woody). Note: You may want to slightly rinse the internal area of the mushrooms, but if so, do it quickly to avoid absorbing too much water. Cover the upper surface of the mushrooms with a bit of olive oil and place them face up into an ovenproof ware. Salt them a little bit and add some more olive oil, then fill all them with the prepared mix. Place into a preheated oven at 350°F for about 30 minutes.
