EASY CHICKEN GUMBO 
3 tbsp. butter
1/4 green pepper, chopped
1 1/2 c. canned okra, cut in 1/2" cubes
1/4 chopped onion
1 qt. canned chicken broth
2 1/2 c. canned tomatoes
1 sm. bay leaf
1 tbsp. minced parsley
1 c. finely diced, cooked chicken

Simmer butter in kettle until soft, with green pepper, okra and chopped onion. Stir in chicken broth, tomatoes and bay leaf. Boil gently for 15 minutes. Season to taste. Remove from heat and add parsley and cooked chicken.
