CHICKEN AND SAUSAGE GUMBO 
6 chicken breasts, boneless and skinless
6 c. water
3 bay leaves
4 garlic cloves, minced
2 tsp. cajun seasoning
1 onion chopped
6 tsp. dried parsley
1 green pepper, chopped
1 (16 oz.) can tomatoes
14 oz. Healthy Choice smoked sausage
1 lb. uncooked shrimp, peeled
1 box frozen chopped okra
1 tbsp. butter
2 tbsp. flour

Bring chicken, water, bay leaves, garlic, seasoning, onion, parsley, green pepper, bouillon, tomatoes, and sausage to a boil. Cook until the chicken is done. Remove chicken and cut into bite size pieces. Simmer chicken with base for 1 hour. Add okra and simmer 10 more minutes.

In another pan, melt butter and stir in flour. It will be dry. Continue to stir until it becomes a light brown. Stir in some of the hot liquid from the gumbo. Return the hot mixture to your simmering gumbo. Add the shrimp and cook about 4 minutes. Add tabasco, cayenne pepper or salt to taste. Serve over white rice.
