FOOL PROOF FLAN | |
1/2 c. sugar 4 eggs 1/4 tsp. salt 1 can evaporated milk 1 tsp. vanilla 1/3 c. sugar Measure 1/2 cup sugar into loaf pan. Place over moderate heat and stir until sugar is melted, turns rich golden brown. Tip pan to coat sides, then cool. Beat eggs to blend whites and yolks, stir in remaining sugar and salt. Beat in milk and vanilla. Pour into loaf pan and set pan in shallow pan of hot water on a shelf in oven. Bake at 350 degrees for 1 hour or until knife inserted in center comes out clean. Serve room temperature or thoroughly chilled. Loosen edges with a knife and turn out onto platter. If desired, pour a jigger of brandy around flan and ignite. Serves 8. |
