FOOL - PROOF CARAMEL ICING 
1 1/3 c. brown sugar
1/3 c. milk
1 1/2 c. confectioners' sugar
2 tbsp. corn syrup
1/4 c. butter
2 tbsp. hot milk

Boil together brown sugar, corn syrup, and 1/3 cup milk until soft ball forms. Blend butter with confectioners' sugar and hot milk. Pour hot syrup over confectioners' sugar mixture. Beat to a spreading consistency. Ice cake. I double the recipe so that there is enough icing for the sides. The recipe above is fine for between layers and top.
