CHEESE - TOPPED ZUCCHINI HALVES 
3 med. or 5 sm. zucchini squash
1 med. onion, sliced
1 tbsp. salad oil
Salt & pepper to taste
1/2 to 1 tsp. oregano
1 (8 oz.) can tomato sauce
1 (6 oz.) pkg. sliced Mozzarella cheese

Cut zucchini in half lengthwise. Cook onion in hot oil until tender but not brown. Add zucchini halves, cut-side up; sprinkle with salt, pepper and oregano. Pour tomato sauce over top. Cover and cook for 10 minutes or until tender. Top zucchini with cheese slices. Serve. Yield: 6 servings.
