SOUP BEAN CAKE 
1 stick butter
1 1/2 c. sugar
2 c. pinto beans, drained & mashed
2 eggs
2 c. self-rising flour
1/2 tsp. salt
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
3 c. raw apples, diced
1 c. raisins
1 tsp. vanilla
1/2 c. nuts, chopped (optional)

Cream together butter, sugar and mashed beans. Add eggs and mix well. In separate bowl, sift together all dry ingredients. Add to creamed mixture. Stir in remaining ingredients. Pour into pan and bake at 350 degrees for 1 hour or until done. Cool and ice.

ICING:

1 lb. powdered sugar
1/2 c. butter, softened
1 tsp. cinnamon
1 tbsp. vanilla
1 tbsp. bean juice

Mix together well and spread on cooled cake.
