DELMONICO POTATOES 
4 med. potatoes
4 tbsp. butter
3 tbsp. flour
1 1/4 c. evaporated milk
1/2 c. grated sharp cheese
1/4 c. dry bread crumbs
Salt and pepper

Heat oven to 400 degrees. Wash, peel and dice potatoes. Boil in lightly salted water until done. Drain potatoes; put in slightly greased casserole dish. Put in boiler and melt butter; add flour and evaporated milk. Heat to boiling, stirring constantly. Add salt and pepper. Pour over potatoes and top with grated cheese. Sprinkle bread crumbs over potatoes. Bake at 400 degrees for 20-30 minutes.
